Spring inspiration brings healthy nutrition creations!


How are you enjoying your spring? Here in Minnesota we’ve had our nice days and just yesterday snow! But all in all, I’d have to say that spring is well on its way!

I’d like to share one of my lunch dishes this month. It is easy to make, tastes great and is loaded with nutrition! Happy dinning! Until next month, eat healthy, keep moving, and be happy!

Lemon Garlic Chicken Salad or Wraps

Prep Time: 10 Minutes

Cook Time: 10 Minutes

Serves: 4

Ingredients

  • 4 chicken breasts, cut in 1-inch cubes

  • 2 tbsp. extra-virgin olive oil

  • 1 garlic clove, minced

  • ¼ tsp sea salt

  • ½ tsp freshly ground black pepper

  • Tamari soy sauce – low sodium & gluten free or Liquid Aminos

  • ½ tsp onion powder (other herbs of your choice)

  • ½ fresh lemon

  • 4 cups of baby spinach (for salad) or 8 large romaine lettuce leaves (to use as wraps)

Directions:

Heat 2 tablespoons of the oil in a 9-inch nonstick skillet over medium heat until shimmering. Add the chicken, garlic, onion powder, sea salt, fresh ground black pepper, soy sauce, and any other herbs. Cook, stirring occasionally, until just translucent, about 7 minutes.

Option 1: Toss the chicken mixture with spinach and spritz with lemon.

Option 2: Plate the romaine. 2 leaves per plate. Put the chicken mixture on the leaves and spritz each with lemon.
