Cherry Banana Nut Mini Muffins


As you probably remember reading in one of my previous posts, I was recently on a detox. What I may not have mentioned is that my husband, Tim, did the detox with me. He said he wanted to detox for a few reasons he wanted to support me and he wanted to lose some of the weight he'd gained over the past couple of years. He was also having a hard time sleeping and often felt like he was retaining fluids.

The detox period was 14-days long and both Tim and I had great results. I lost 3 pounds, cleared up some brain fog I'd been experiencing and my bloating went away. Tim lost 8 pounds, he has a lot more energy, and is no longer retaining fluids.

When the detox was over, Tim said, wow, I feel so much better, I think we should keep going! So we have diligently embraced eating a whole foods based diet and made many other changes to reduce toxins in our home like using safer cleaning products and personal care products (note: if you are interested in safer personal care products, click on the Beauty Counter tab in the menu bar above).

Tim has a bit of a sweet-tooth and he has missed some of the sweets he used to eat so I created this recipe to satisfy his craving. I've had several people ask me for the recipe so I thought I'd share it with all of you as well! I hope you enjoy them as much as Tim does.

Cherry Banana Nut Mini Muffins

Makes 48 mini muffins

Ingredients:

5 extremely ripened banana's (almost to the point you'd toss them out - important for sweetness)

1/3 cup coconut oil

4 eggs

1 teaspoon organic pure vanilla extract

1 1/2 teaspoon cinnamon

1/2 cup coconut flour

1 teaspoon baking soda

1/4 teaspoon sea salt

1/2 cup finely chopped walnuts

12 fresh pitted cherries (cut each into 4 pieces)

Directions:

- Preheat oven to 350 degrees

- Line mini muffin tin with liners (I personally like the brand: "If you care Mini Baking Cups") or skip the liners and coat the muffin tin tray with coconut oil spray

- In a mixing bowl, mash the banana's then add in the rest of the ingredients except the cherries, mix well

- Scoop 1 tablespoon of batter into each lined muffin tin

- Place 1 cherry piece on top of each uncooked muffin and bake for 10 minutes (check to see if done by inserting a toothpick in the muffin and pulling it out, it should come out clean and the muffins should be a golden brown
