For today’s blog post I wanted to share a very easy to make, yummy treat recipe for you coconut lover’s out there!
This recipe is low carb (can be made sugar-free, too, see note below), has healthy fats and protein! Enjoy.
Healthy Macaroons
Prep Time: 10 minutes Bake Time: 20 minutes Makes: 40
Ingredients
4 Large Egg Whites
1 Pinch of Sea Salt
1/2 c. Coconut Sugar (to make these sugar-free use Birch Xylitol)
8 oz. Finely Shredded Unsweetened Coconut
Dark Chocolate Bar (use 72% coco or higher)
Directions
Using a stainless-steel bowl and electric beaters, whip egg whites with salt until stiff peaks start to form.
Add in coconut sugar and continue to beat until stiff.
With a rubber spatula, gently fold in coconut.
Using a small cookie scoop, drop batter on parchment lined cookie sheets.
Bake at 350°F for 12-13 minutes. Outside should be golden and inside slightly soft.
Let macaroons completely cool on rack and then drizzle with melted chocolate if desired.
