Healthy Macaroons


Hello Friends!

I recently posted about roasted veggies and how important it is not to overlook them this time of year! I hope that you found the blog content motivating and that you’ve add a few veggies in this holiday season!

For today’s blog post I wanted to share a very easy to make, yummy treat recipe for you coconut lover’s out there!

This recipe is low carb (can be made sugar-free, too, see note below), has healthy fats and protein! Enjoy.

Healthy Macaroons

Prep Time: 10 minutes Bake Time: 20 minutes Makes: 40

Ingredients

  • 4 Large Egg Whites

  • 1 Pinch of Sea Salt

  • 1/2 c. Coconut Sugar (to make these sugar-free use Birch Xylitol)

  • 8 oz. Finely Shredded Unsweetened Coconut

  • Dark Chocolate Bar (use 72% coco or higher)

Directions

  1. Using a stainless-steel bowl and electric beaters, whip egg whites with salt until stiff peaks start to form.

  2. Add in coconut sugar and continue to beat until stiff.

  3. With a rubber spatula, gently fold in coconut.

  4. Using a small cookie scoop, drop batter on parchment lined cookie sheets.

  5. Bake at 350°F for 12-13 minutes. Outside should be golden and inside slightly soft.

  6. Let macaroons completely cool on rack and then drizzle with melted chocolate if desired.
