Spring Is Here!


After a long cold winter, it’s finally here – SPRING!!

And along with it comes

Spring Foods!

Here are a few fresh, healthful spring foods I truly enjoy this time of year. Enjoy them as a great way to get those much-needed nutrients in. Also included this post, a recipe or two.

  1. Asparagus – did you know that green vegetables are great for eye health? Additionally, asparagus is high in Vitamin K, fiber (it nourishes the digestive tract) and contains anti-inflammatory and antioxidant properties.

  2. Basil – did you know that basil helps fight depression? Other benefits of eating basil include that it contains antibacterial properties, antimicrobial properties that fight viruses and infections, it promotes cardiovascular health and combats stress by acting as an adaptogen.

  3. Beets – did you know that beets contain folate (a B vitamin) which helps reduce the risk of birth defects? They are high in vitamin c, fiber, and essential minerals like potassium (nerve and muscle function) and manganese (bones, liver, kidneys, and pancreas).

  4. Blueberries – did you know that blueberries are considered a “super food”? It contains phytonutrients which support heart health. It is also loaded with fiber, potassium, folate, vitamin C, vitamin B5. Because of the fiber content in blueberries, they help reduce the amount of cholesterol in the blood stream and that also helps decrease the risk of heart disease.

  5. Radishes – did you know radishes (and other white veggies) are great to help lower blood pressure? They are loaded with the nutrients folate, fiber, riboflavin, potassium, and good amounts of copper, vitamin B5, magnesium, manganese, and calcium.

  6. Salmon – rich in protein and healthy fats like Omega-3 fatty acids. It also contains the antioxidant astaxanthin (research shows that it lowers LDL “bad” cholesterol), B vitamins, potassium, and selenium (immunity booster, improves blood flow, regulates thyroid function).
